Oven-fried Chicken Nuggets

20160511_181542Ever since I watched a television show (some 10 years or so ago) that showed how chicken nuggets are made, my disgust for the meat mixture makes my stomach churn at the thought of choking one down. Seriously. Disgusting.

I’ll give you a moment to clear your mind and think of a more pleasant eating experience (like maybe ice cream, or chocolate cake)…

Okay, now that we’re back on track, this recipe for chicken nuggets is not similar to the nuggets you’ll find in the frozen section at the grocery or at the typical fast food chain. That’s because it’s more of a literal take on the name than its overly-processed counterpart. This recipe uses chunks of boneless, skinless chicken breast dredged with a flour mixture coating and “fried” in butter (the real deal, not that tasteless plastic-y knockoff, margarine).

It’s a super simple recipe with a half-dozen ingredients you can pronounce and most of which are probably stocked in your pantry.

Let’s begin, shall we?

Oven-fried Chicken Nuggets

Ingredients:

  • 2 boneless, skinless chicken breast halves (cut into 1-inch chunks)
  • 1/4 c. butter
  • 1/4 c. flour
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • Additional seasoning to taste (dill, garlic, or basil come to mind)

What to do:

  1. Preheat oven to 425° F.
  2. Add butter to a 13 x 9 baking dish and place in the oven to melt butter while you prep the chicken.
  3. Add dry ingredients to a small bowl. Stir to combine.
  4. Drop a handful of chicken chunks into the flour mixture and lightly toss the chicken around to coat it. Set aside and continue to coat the chicken in small batches until all of the chicken has been dredged.
  5. Once the butter is melted, remove dish from the oven and add the flour-coated chicken pieces to the pan.
  6. Place dish back in the oven and bake for 30 minutes; stir chicken nuggets and bake for another 20-30 minutes, until cooked through.
  7. Remove dish from oven and serve nuggets with your favorite garnish, dipping sauce, and/or sides. Enjoy!
